Aim of the Restaurant Manager role

In this Head of Department role, it will be to lead the delivery of exceptional customer service and motivating team members to reach their growth potential through continuous learning and development. You will be responsible for increasing profitability by reducing costs and wastage, whilst increasing spends and business, as well as improving productivity


Key responsibilities of the Restaurant Manager


  • Oversee daily operations of The Dining Room, Stillroom, and Room Service, ensuring exceptional service standards.

  • Maintain a strong presence during peak service times, leading by example to uphold 5-star performance.

  • Support and train Assistant Managers to sustain high standards and operational excellence.

  • Delegate tasks effectively, ensuring accountability and follow-up.

  • Manage all restaurant administration and reporting for the Food & Beverage Operations Director.

  • Prepare and deliver team trainings, briefings, and monthly meetings to ensure clear communication and consistency.

  • Support disciplinary processes with professionalism and discretion.

  • Maintain thorough knowledge of all hotel services to meet and exceed guest expectations.

  • Keep the team informed of goals, budgets, and performance standards.

  • Collaborate with senior management to address guest feedback, improve service, and maintain integrity in all communications.

  • Liaise with Reception and Reservations to manage bookings and special requests.

  • Work with the Food & Beverage Operations Director to identify opportunities, resolve challenges, and drive sales growth.

  • Foster a united, respectful, and collaborative management culture through communication, teamwork, and leadership.


Qualifications


  • Restaurant Manager – About you: Proven experience in managing a restaurant in the luxury sector is essential

  • Previous management experience in a high volume restaurant is desirable

  • Confidence managing a large team in a fast paced environment

  • Experience in delivering training, writing rotas and team management

  • Pro-active and passionate for your work and communication with colleagues

  • Enthusiastic about hospitality and 5 star service

  • Keen eye for detail and flexible attitude
