Overview

We are a luxurious, resort set in dramatic Highland scenery, with a Rosette fine-dining restaurant, casual brasserie, whisky bar and extensive private event facilities. Following a recent kitchen and dining room refurbishment, we are recruiting a hands-on Restaurant Duty Manager to lead front-of-house service and deliver unforgettable guest experiences.

The Role

Reporting to the Restaurant Manager, you will oversee all evening service operations in the flagship restaurant and support daytime brasserie service. This is a key leadership position ideal for an ambitious supervisor or junior manager ready to step up in a calm, high-standard environment.

Key Responsibilities
  • Lead and motivate a brigade of FOH staff across fine-dining and casual outlets
  • Ensure seamless service delivery for à la carte, tasting menus and private dining
  • Drive wine sales and upsell opportunities (extensive cellar list)
  • Manage guest feedback in real time, maintaining 5-star TripAdvisor standards
  • Oversee event set-ups for weddings, shooting parties and corporate retreats
  • Control stock, rota planning and compliance with health & safety
