Set to open within The Langham, London, Sale e Pepe Mare marks an exciting new chapter in the storied legacy of Sale e Pepe, the iconic Knightsbridge restaurant that has defined Italian dining in the capital since 1974. This landmark collaboration brings together two London icons under one roof, blending heritage, elegance, and modern energy.

Sale e Pepe Mare will capture the sun‑soaked spirit, vibrant flavours, and unmistakable sense of la dolce vita. Serving breakfast, lunch, and dinner, the restaurant celebrates exceptional seafood alongside a refined dining and bar experience inspired by the Mediterranean coast.

We are now seeking a Pastry Chef de Partie to join our opening pastry team in early 2026. This is an outstanding opportunity for a skilled and passionate pastry professional to help shape the dessert offering of a premium, high‑volume fine dining destination from the very beginning.

About the Role

As Pastry Chef de Partie, you will be responsible for the preparation, execution, and presentation of desserts, pastries, and baked goods within your designated station. Working closely with the Pastry Chef and Sous Chef, you will help deliver consistent quality, creativity, and precision across all pastry sections.

You will play a key role in maintaining high operational standards, supporting menu development, and contributing to a smooth and efficient service - all while upholding the elegance and excellence synonymous with Sale e Pepe Mare.

Key Responsibilities
  • Prepare, cook, and present desserts, pastries, breads, and plated sweets to the highest standard.
  • Execute recipes and plating with precision, consistency, and attention to detail.
  • Maintain orderly and efficient mise en place for your section.
  • Collaborate closely with the pastry and wider kitchen team during service.
  • Support menu development and seasonal dessert creation under the guidance of the Pastry Chef.
  • Ensure strict adherence to hygiene, cleanliness, and food safety standards.
  • Assist in training and mentoring junior pastry team members.
  • Contribute ideas and creativity to elevate the overall pastry offering.
Requirements
  • Proven experience as a Pastry Chef de Partie within a premium, high‑volume restaurant or hotel.
  • Strong technical pastry skills and refined attention to detail.
  • Ability to work calmly and efficiently under pressure.
  • A collaborative team player with excellent communication and organisation.

  • High personal and professional standards, including hygiene and presentation.
  • Flexibility to work early mornings, weekends, and peak service periods.
  • Proof of right to work / pre‑settled or settled status in the UK.
