Job summary

Speedboat Bar, part of JKS Restaurants, is seeking a Junior Sous Chef to join its Thai-inspired kitchen. You will help deliver innovative dishes and support the senior team in running the kitchen to a high standard.

The ideal candidate will have experience as a Junior Sous Chef or Senior CDP in a quality restaurant, with a passion for Asian cuisine and strong leadership skills to motivate the brigade. This role offers a chance to grow within a respected award-winning group.

Qualifications

• Previous experience as a Junior Sous Chef or Senior Chef de Partie in a high-quality restaurant.
• Passion for Asian and/or Thai cuisine.
• Strong awareness of current food trends and seasonal produce.
• Creative approach with strong attention to detail.
• Proven ability to manage, train and motivate a kitchen brigade.
• Working knowledge of health and safety, compliance and procedures.

Responsibilities

• Ensure delivery of high-quality and innovative dishes.

Speedboat Bar are seeking a Junior Sous Chef to join their team. The successful candidate will be friendly, personable and passionate about all things food and drink. This is a fantastic opportunity for an experienced Junior Sous Chef looking for a new role in an award winning, critically acclaimed group.

The Restaurant

In partnership with Chef Luke Farrell, Speedboat Bar takes inspiration from the Thai-Chinese restaurants in Bangkok’s Chinatown and the thrilling sport of Speedboat racing along the canals (klongs) of Thailand.

The menu explores the ingredients, flavours and techniques that took Luke to Bangkok and its unique foodways; Chinese in origin but now uniquely Thai. A masterclass in wok cooking, roasted meats and spicy sauces, each hinging on the specialist Thai herbs and ingredients cultivated and grown at Luke’s nursery, Ryewater, in Dorset.

The bar focuses on sharing Singha beer towers, slushies and chasers; the signature Speedboat cocktails – Snakesblood Negroni; Shop Window Old Fashioned; and Jelly Bia made with frozen Leo Lager; as well as softs such as a Snakefruit soda.

The Position

As Junior Sous Chef, you will be responsible for ensuring the delivery of consistent, high quality and innovative dishes throughout the operation. Working closely with the senior team; you will assist in managing the overall kitchen operation,
