Job summary

Ellis Mack Recruitment is working with a high-profile independent bar and restaurant group opening in Glasgow to recruit a Head Chef for a new site in the city centre. The role offers a competitive package (£55,000–£70,000) and real scope for progression as the concept grows.

You will lead a quality-led kitchen, drive seasonal menus, manage stock and costs, train staff, and ensure top-class service across all periods.

Qualifications

• Proven experience as a Head Chef or strong Sous Chef within a quality-led contemporary bar or restaurant (non-hotel).
• Strong passion for food, ingredients, and modern cooking techniques.
• Driven to deliver first-class standards across all kitchen functions.
• Demonstrated career stability, loyalty and progression.

Responsibilities

• Full responsibility for the day-to-day running of the kitchen.
• Maintain and drive consistently high food standards across all services.
• Recruit, train, mentor, and develop junior kitchen team members.
• Manage daily stock control, ordering, and supplier relationships.
• Oversee all areas of kitchen management, including: Food cost control, EH&S, menu design, KPIs.
• Create a positive, professional, high-performing kitchen culture.

The Role: Head Chef- NEW opening

Package: £55-70K+ (negotiable pending experience)

Newly acquired site in the city centre, currently undergoing complete refurb. Newly opened op will be combo, destination restaurant with strong drinks, cocktail offer. Anticipated high-volume, high-quality operation. Promises to be a quality addition to the Glasgow scene

My client is looking for an ambitious, driven Head Chef from similar like for like operations. This is an expanding operation that will offer excellent career progression opportunities in time.

Key Responsibilities

• Full responsibility for the day-to-day running of the kitchen.
• Maintain and drive consistently high food standards across all services.
• Recruit, train, mentor, and develop junior kitchen team members.
• Manage daily stock control, ordering, and supplier relationships.
• Oversee all areas of kitchen management, including:
  • Food cost control and GP% targets
  • Environmental health, food safety, and compliance
  • Menu design, development, and seasonal updates
  • Kitchen KPIs and operational performance
• Create a positive, professional, and high-performing kitchen culture.
