Job summary

NAMMOS LONDON is seeking a hands-on finance lead to build and run the on-site finance function for our new Mayfair venue. You will report to the Group CFO and partner with the GM and Group Finance team, balancing financial control with day-to-day operations.

The role offers autonomy, exposure to leadership, and a clear path to grow as the business scales in the UK; ideal for someone already number two in a hospitality finance team ready to own the function.

Nammos has arrived in London, bringing our signature style and culinary excellence to one of the city's most exciting locations. This is a rare opportunity to be part of a landmark opening and to build something extraordinary from the very beginning.

This is a founding finance role for our London flagship, and a genuine step up for the right person. Nammos London does not yet have an established on-site finance function - you will build it, then run it as the restaurant scales. You'll be the finance lead on the ground in Mayfair, reporting directly to the Group CFO and working hand-in-glove with the General Manager and the Group Finance team.

This is a hands-on, operational role with real autonomy, direct exposure to group leadership, and a clear path to grow with the business as it expands in the UK. It is not a corporate reporting seat - you'll spend as much time on the floor with the operations team as you will in spreadsheets. If you're currently a No. 2 in a good restaurant finance team and ready to own an entire venue, this is the challenge you've been waiting for.

You won't be stranded. While you own finance on the ground, you'll have direct access to and hands-on support from the Group Finance team for technical, statutory, VAT, and audit matters, with a named point of contact and regular check-ins - especially through your first months. We'll be clear from day one about what you decide independently and what you run past group.

What You'll Own
  • Daily financial operations- cash and POS reconciliation, banking, float management, and daily revenue controls for a high-volume luxury restaurant.
  • Cost control- food and beverage cost controls (theoretical vs. actual COGS), stock-takes, wastage tracking, and labour cost management, alongside the Head Chef and GM.
  • Purchasing and procurement- build and lead purchase-to-pay, onboard and vet suppliers, and negotiate commercial terms with discipline across kitchen and bar.
  • Systems and controls- own POS-to-GL integration with the GM, design the chart of accounts, and implement the site's accounting tools.
  • Process and governance- write and embed the SOPs, financial controls, and approval workflows a new venue needs.
  • Banking and treasury- establish and manage the venue's banking relationships and day-to-day treasury.
  • Reporting- produce timely monthly management accounts (P&L, balance sheet, cash flow) with commentary and variance analysis to the Group CFO and Group Finance team, in line with group timetables and standards.
  • Compliance- UK VAT submissions, service charge and tronc administration, PAYE/tax coordination, and auditor liaison (with Group Finance support).
  • Business partnering- be the commercial finance voice alongside the GM and operations team, not just the scorekeeper.
What You'll Bring
Essential
  • Part-qualified (finalist) or newly qualified accountant (ACCA / CIMA / ACA), or equivalent demonstrable experience.
  • Hospitality finance experience with genuine F&B fluency - you talk naturally in covers, spend per head, GP%, labour %, and stock control.
  • Hands-on experience of restaurant or high-volume F&B finance, close to the daily grind of the close.
  • Ready to build a finance function from the ground up - whether you've done it before, or have been close to it and are hungry to own it yourself.
  • Comfort being genuinely hands-on and, initially, the whole finance function with no team beneath you.
  • Working knowledge of UK VAT, including restaurant-specific treatment (food/alcohol, service charge, tips/tronc).
  • The judgment to know what you can decide alone and when to evaluate.
  • Thrives on autonomy, ambiguity, and start-up pace inside an established luxury brand.
Desirable
  • Exposure to procurement and supplier negotiation.
  • Experience of a venue opening or a pre-systems environment.
  • Familiarity with POS and accounting system implementation.
  • Multi-currency or group-reporting exposure.
  • Premium or luxury hospitality background.
