Job summary

Fairmont Southampton, Bermuda’s premier luxury resort, invites a seasoned Cost Controller to lead cost control and inventory management across our Food & Beverage operations during pre-opening and ongoing operations. You will develop procedures, implement systems like GAIA and BirchStreet, and partner with Purchasing and Finance to ensure accuracy and compliance.

Reporting to the Director, Finance & Business Support, you will establish costing standards, monitor KPIs, and drive cost

Qualifications

Degree or diploma in Accounting, Finance, Supply Chain Management, Hospitality Management, or related field preferred.
Minimum 3–5 years of experience in cost control, inventory control, or purchasing.
Hotel pre-opening experience strongly preferred.
Experience working in a multi-outlet Food & Beverage environment preferred.
Knowledge of GAIA or BirchStreet and inventory controls.

Responsibilities

Assist in pre-opening setup and configuration of inventory and procurement systems for cost control and reporting.
Develop inventory procedures and documentation for Food & Beverage and operating supplies.
Establish receiving and stock control procedures in coordination with the Director of Purchasing.
Monitor and analyze Food & Beverage costs to meet budget KPIs and identify cost improvements.
Maintain accurate inventory records and perform month-end counts and reconciliations.
