F&B Business Analyst

Location: London

Hours: Full Time - Monday to Friday

Contract Type: Permanent, Salaried

This role is responsible for liaising across multiple departments, ensuring effective communication, and supporting the execution of F&B projects and activations. The role will support analysis of operational and financial performance, coordinate cross‑functional projects, and ensure that the F&B function is working efficiently and aligned to Merlin's commercial and guest priorities. This position operates within a matrix environment, requiring strong collaboration across central, regional, and attraction teams to align priorities and deliver consistent commercial outcomes.

Responsibilities
  • Coordinate F&B projects and initiatives across departments, ensuring clear communication and timely delivery.
  • Set cadence and routines for the F&B team, including meetings, reporting, and project check‑ins.
  • Liaise with park F&B teams to ensure alignment and smooth execution of initiatives.
  • Track and manage project timelines, milestones, and dependencies to support successful execution of F&B initiatives.
  • Identify and connect with the right stakeholders across Marketing, Branding, IP, IT, and Operations to secure information, support, and approvals.
  • Liaise with Marketing, Branding, and IP teams to align F&B activations with broader campaigns and brand objectives.
  • Work closely with IT to ensure effective use of F&B technology, reporting tools, and operational systems.
  • Review financial and operational data across sites to identify trends, variances, and actionable insights.
  • Set, track, and monitor KPIs, preparing clear summaries and reports for leadership.
  • Conduct market research to support menu development, pricing strategies, and operational decision‑making.
  • Provide analytical support for new initiatives, seasonal activations, and pilot projects.
  • Develop and maintain performance dashboards to monitor key F&B KPIs.
  • Maintain a strong understanding of park operations to connect initiatives with business outcomes.
  • Collaborate across matrix teams to standardise reporting and embed a KPI‑driven culture within F&B operations.
  • Conduct detailed analysis of F&B trends across the entertainment and leisure sector, using market data, consumer insights, and benchmarking tools to identify emerging opportunities and risks.
  • Evaluate evolving guest behaviours, spending patterns, and menu preferences to support data‑driven recommendations that enhance commercial performance and guest satisfaction.
Qualifications & Experience
  • Bachelor's degree in Business, Hospitality, Economics, or a related field (essential).
  • Experience in F&B operations, management, or commercial roles.
  • Familiarity with Merlin frameworks and business approach (desirable).
  • Proven ability to coordinate projects and manage multiple stakeholders.
  • Strong analytical and data interpretation skills with attention to detail.
  • Excellent communication, organisation, and interpersonal skills.
  • Experience working in a matrix organisation and reporting against KPIs (essential).
