Deputy Back of House Manager

As a Deputy Back of House Manager you will be responsible for:

  • To allocate staff to work in a Back of House workstation and supervise the performance of all tasks relating to that station.
  • To manage and coordinate night cleaning, ensuring the work is carried out to standards, staff attendance is correct and supervise and maintain the standards of cleanliness in the organization overnight.
  • To roster staff, supervisors and assistant managers to effectively cover all shifts and workload.
  • To assist, monitor and consistently improve Health and Safety within the BOH areas of the hotel.
  • To assist the Back of House Manager in the organization of the weekly rota to effectively cover all shifts and workload.
  • To ensure all mise en place is prepared in advance of requirement. To effectively assist and organize in advance for special events, special occasions and normal day business. To assist and anticipate requirements and be highly organized at all times.
  • To ensure mise en place is continually topped up during service. To effectively assist and organize in advance for special events, special occasions and normal day business. To assist and anticipate requirements and be highly organized at all times.
  • To issue various stores to F&B departments ensuring requisitions are correctly filled in and signed by the F&B Manager.
  • To return to stores after use all equipment not required for daily use in the F&B departments.
  • Raise purchase requests for equipment, ensuring sufficient lead time for ordering and receipt of stock, and follow up with the Back of House Manager for approval.
  • To assist in monthly and bi-annual stocktaking of operating equipment.
  • To be aware of and to adhere to all health and safety, fire, hygiene and COSHH regulations governing the work you are undertaking/supervising and to ensure the correct chemicals/detergents are used at all times.
  • Assist in managing and recording an effective breakage program in the hotel with the goal to minimize breakage.
