Job summary

ESS – Defence, Energy and Government Services is hiring a Head Chef for Cawdor Barracks to lead a catering operation serving up to 60 Service Personnel. The role is full-time with 5 days out of 7, shifts from 6.30am to 8pm, and a hands-on leadership style is required to develop the team and maintain a well‑structured kitchen in a military environment.

You’ll take full responsibility for the kitchen, leading a team of six and ensuring high standards of food quality, safety and service delivery.

• Leadership experience in kitchen environments.
• Ability to train and develop team members.
• Knowledge of stock ordering, auditing and waste minimisation.
• Strong understanding of food safety and health & safety regulations.
• Calm, organised and adaptable to structured catering operations.

Responsibilities

• Prepare and deliver high-quality, nutritious meals for Service Personnel.
• Lead a hands-on kitchen operation and set the standard from the front.
• Manage daily feeding activities in line with contract requirements.
• Line manage and develop a team of six.
• Coach and support team members to build capability and confidence.
• Handle food ordering, stock control, audits, and waste minimisation.
• Ensure excellent food presentation and service standards.
• Maintain audits, paperwork and compliance checks.

What you’ll be doing

• Maintaining full compliance with Food Safety and Health & Safety regulations
• Taking ownership of kitchen audits, paperwork, and compliance checks

What we’re looking for

• Proven experience as a Head Chef or Senior Chef, ideally within contract catering
• Experience managing and developing kitchen teams
• Strong knowledge of stock management, ordering, and auditing processes
• Confident trainer with experience developing others
• Calm, organised, and comfortable working in a structured catering environment
• Reliable, flexible, and able to adapt to changing business needs
• Able to travel to site reliably
