The Peninsula London is excited to announce that we are seeking a Chef de Rang- Canton Blue to work within our Cantonese Restaurant overseeing a team of F&B Attendants and reporting to the Assistant Managers and Supervisors. On the ground floor, Canton Blue, the hotel’s innovative Cantonese restaurant, will celebrate the spice-trade union of Asian and British cultures with menus of creative dishes, along with cocktails, and artisanal teas. This position will have a great passion for service and be able to translate this into a special guest experience.

Key Accountabilities
  • Perform a friendly yet discreet and unobtrusive service in greeting, seating, and waiting on all guests.
  • Understand all food and beverage items ordered, including ingredients, methods of preparation, and proper service. Focus on the sequence of service standards.
  • With excellent knowledge of food and beverage items, you will also ensure you both attend relevant training and then deliver and train the F&B Attendants.
General Requirements
  • Good knowledge of food and beverage with an emphasis on wines.
  • Experience of 1 year or more within the food and beverage department in a luxury hotel and an understanding of the 3 main meal periods and demands.
  • Friendly and positive with a flexible approach and confidence to guide a team.
  • Ability to work under pressure.
