Responsibilities
- Ensure all customers receive the highest quality of service through continuous improvement to product and services.
- Gather customer feedback, identify opportunities to develop the lounge product and communicate them concisely to Emirates personnel.
- Present all food and beverage items, ensuring quality, quantity and display meet specifications.
- Follow food ratio guidelines set by Emirates.
- Maintain buffet and stock levels, replenish regularly, and adhere to food and safety standards.
- Control and monitor hygiene standards as per HACCP.
- Provide training and guidance to service staff on food presentation and display.
- Ensure personal and food hygiene, as well as housekeeping standards, are adhered to in lounge food services areas and kitchen.
- Ensure all food orders are completed daily to maintain sufficient supplies of food stocks.
- Clean the kitchen at the end of each service and prepare it for the next shift.
- Keep back‑of‑house areas clean and tidy, including fridges, freezers, and storage areas.
- Store and display products with correct date coding, stock rotation, and labeling according to shelf‑life rules.
- Prepare sufficient food for the following shift.
- Interact with lounge customers to gain feedback; communicate findings to the Lounge Supervisor / Lounge Manager / Emirates staff promptly.
- liaise with Sodexo and Emirates Lounge teams for irregularities and important information impacting lounge operations.
- Communicate product, service and customer issues to Sodexo and Emirates staff for timely corrective action.
- Adhere to standard recipes and food specifications and knowledge book.
- Plan and forecast food consumption for the week, managing stock with other chefs, store personnel and supervisors.
- Define responsibilities and duties for all kitchen staff and determine training needs.
- Lead weekly team meetings with kitchen staff and supervisors to track continuous progress.
- Prepare the daily food preparation list for the chef and kitchen assistant.
- Communicate with all supervisors regarding kitchen monitoring, cooking times, cleanliness and paperwork.
- Create a hand‑over sheet/book to aid communication among chefs, kitchen assistants and supervisors.
- Train chefs and store personnel on ordering, recording, labeling and date coding with allergens.
- Train staff on correct use of food temperature probes, recording temperatures and probe calibration.
- Demonstrate cleaning procedures for sections, fridges and equipment.
- Teach chefs and kitchen assistants how to check and prepare salads per ratio and manage wastage.
- Guide staff on cooking times, multitasking and correct temperature recording for food and dishwashers.
- Create new cleaning schedules for chefs and kitchen assistants.
- Maintain standard of cleanliness, sanitation and safety in the entire kitchen area at all times.
