Thesleff Group in London is seeking an experienced Bar Manager to own the bar operation for Sale e Pepe Mare and La Terrazza at The Langham. You will lead a skilled team, uphold high standards, and collaborate with senior leadership to develop beverage offerings year-round.

The role requires proven bar management experience in premium environments, deep cocktail knowledge, and a passion for delivering memorable guest experiences.

Sale e Pepe Mare is looking for an experienced Bar Manager to take ownership of our bar operation, including our outdoor concept, La Terrazza.

Located at The Langham Hotel, Sale e Pepe Mare brings the spirit of the Italian coast to the heart of London, combining exceptional seafood, warm Italian hospitality and a sophisticated drinks offering. During the warmer months, La Terrazza extends that experience outdoors with a more relaxed, vibrant atmosphere.

We are looking for a Bar Manager who understands that a great bar is about much more than making great drinks. You will be responsible for the complete operation: your team, standards, service, stock, GP, training and, importantly, creating an atmosphere that guests want to return to.

As Bar Manager, you will work closely with the senior management team to develop the drinks offering across Sale e Pepe Mare and La Terrazza while ensuring both concepts retain their own personality.

What You’ll Be Doing

As our Bar Manager, you will:

• Lead, motivate and develop the bar team, creating a strong culture of service and accountability
• Maintain consistently high standards across Sale e Pepe Mare and La Terrazza
• Oversee cocktails, spirits, wines, beers and non-alcoholic drinks, ensuring excellent product knowledge throughout the team
• Work with the wider team to develop seasonal drinks and commercially strong menus
• Take ownership of stock management, ordering, wastage, GP and bar-related costsEnsure rotas and staffing levels reflect the needs of the business
• Recruit, train and develop new and existing team members
• Drive sales through confident recommendations, upselling and genuine hospitality
• Maintain excellent standards of cleanliness, organisation and compliance
• Work collaboratively with the restaurant, kitchen and senior leadership teams

About You

We are looking for a Bar Manager who combines strong operational ability with personality and presence.

You will ideally have:

• Previous experience as a Bar Manager, Assistant Bar Manager or senior bar leader within a premium restaurant, hotel or high-volume hospitality environment
• Strong cocktail, spirits and general beverage knowledge
• A solid understanding of stock control, GP and commercial bar management
• Experience leading, training and developing a high-performing team
• The confidence to manage a busy operation while remaining visible and engaged with guests
• Excellent communication and organisational skills
• A genuine passion for hospitality and creating memorable experiences
