What is the job?

This placement plan offers two culinary students the opportunity to develop and grow within the Andras Hotel Group, gaining hands‑on experience across multiple hotel kitchens within the IHG worldwide brand.

Student 1

12‑month placement at Crowne Plaza Belfast (CP). Multi‑outlet operations, restaurant and C&B service, cost control, waste management, leadership.

Student 2

8–9 months at Holiday Inn Belfast (HI) followed by transition to Crowne Plaza Belfast (CP) for the remaining 3–4 months. Breakfast and casual dining, kitchen operations, transition to large‑scale C&B, menu development.

About The Role
Student 1 : Crowne Plaza
  • Gain understanding of HACCP / COSHH
  • Assess knife handling, review classical cuts, soup and sauce production.
  • Rotation across breakfast, staff meals, and restaurant operations.
  • Run own section within the restaurant, manage prep lists, coordinate with F&B, and demonstrate leadership and service responsibility.
  • Apply food cost and waste tracking, sustainability initiatives. Includes visits to AH sister hotels (HBH, ibis CC, ibis QQ).
  • Contribute to menu planning and specials, understand costings and guest satisfaction feedback. Includes visits to AH sister hotels (HBH, ibis CC, ibis QQ).
  • Attend supplier site visits and participate in training on product sourcing and quality.
  • Work within the banqueting kitchen on large events (up to 600 guests), manage mise en place, plate‑up coordination, and teamwork for corporate events.
  • Wear clean, suitable uniform.
  • Ensure a high standard of personal hygiene and grooming.
  • Upkeep of the equal opportunities policy to ensure that there is a neutral working environment.
  • Participate in any training and personnel exercises designed to improve standards and performance.
  • Work in accordance with standard procedures within each department.
  • Keep staff / work areas tidy, safe and report any hazard, accident, loss or damage to management and observe all requirements under Health & Safety at Work act (1989).
Student 2 : Holiday Inn to Crowne Plaza
  • Gain understanding of HACCP / COSHH
  • Assess knife handling, review classical cut skills, soups and sauces.
  • Buffet setup, service timing, communication with F&B team. Includes visits to AH sister hotels (Hampton by Hilton, ibis City Centre, and ibis Queen’s Quarter) to gain broader operational insight.
  • Cost awareness, stock control, waste logging, sustainability. Includes visits to AH sister hotels (HBH, Ibis CC, Ibis QQ).
  • Participate in menu planning, assist with daily specials, cost per portion, and guest feedback review. Includes visits to AH sister hotels (HBH, Ibis CC, Ibis QQ).
  • Manage / Co‑manage section, communication with service team.
  • Attend food supplier visits; explore sourcing, cost negotiation, and sustainability practices.
  • Review learning at HI, prepare for transition to CP, focus on adapting to large‑scale kitchen operations.
  • Integrate into CP kitchen, focusing on banqueting, large event preparation, and teamwork under pressure.
  • Wear clean, suitable uniform.
  • Ensure a high standard of personal hygiene and grooming.
  • Upkeep of the equal opportunities policy to ensure that there is a neutral working environment.
  • Participate in any training and personnel exercises designed to improve standards and performance. Work in accordance with standard procedures within each department.
