Job summary

FGF Brands is seeking a Manager, Research & Development to lead product development and innovation for icings, glazes, fillings and finishing applications for cakes and donuts. You will drive NPD from concept through plant scale-up and commercialization, partnering with Operations, QA, Regulatory, Procurement and Sales to meet customer expectations and business goals.

The ideal candidate has bakery product development expertise, project leadership experience and hands-on knowledge of cakes,

Qualifications

• Bachelor's degree in Food Science, Food Technology, or related field, or Culinary Diploma in Baking and Pastry Arts.
• 7+ years in bakery product development, pastry, or food manufacturing.
• Experience leading R&D projects and mentoring technical teams.
• Hands-on experience with cakes, donuts, icings, glazes and related finishing systems.
• Strong knowledge of ingredient functionality, processing parameters and shelf life.

Responsibilities

• Lead development and commercialization of icings, glazes, fillings and frostings for cakes and donuts.
• Manage NPD and product-improvement projects from concept to scale-up.
• Develop project plans with timelines, technical requirements, testing and commercialization.
• Evaluate ingredients/technologies for icing performance (texture, viscosity, stability, flavor).
• Collaborate cross-functionally with Operations, QA, Regulatory, Procurement, Marketing, Sales.
• Ensure product specs, costs, ingredients, packaging and distribution requirements are accurate.
