Job description

The Breakfast Baker/Breakfast Cook – Night Supervisor is responsible for overseeing all galley operations during evening and overnight hours, acting as the lead in the absence of the Executive Chef or Sous Chef. This position plays a critical role in maintaining high standards of food quality, safety and presentation, while leading and supporting the galley team across multiple departments.

The Perfect Candidate:
  • Minimum 2 years of supervisory experience in a commercial or institutional kitchen, preferably during night shifts.
  • MED STCW Basic Safety Training is required (or you must be prepared to enroll in training upon being hired).
  • Marine Medical Examination is required.
  • Strong knowledge, experience and understanding of multiple galley departments (e.g., Sandwich, Breakfast, Bakery).
  • Advanced FoodSafe (or equivalent) certification required.
  • Proven leadership and team management skills, with the ability to motivate and mentor staff.
  • Solid understanding of HACCP, allergen protocols, and food safety compliance.
  • Effective communicator with excellent organizational and problem-solving skills.
  • Ability to remain calm, decisive and professional, especially under pressure.
Responsibilities Include:
  • Supervise night shift galley staff, ensuring tasks are completed safely and efficiently.
  • Lead by example and maintain professionalism in all interactions.
  • Monitor food preparation, cooking, and presentation to guarantee consistency and quality.
  • Adjust staffing and workload distribution in response to absences or operational needs.
  • Step in across departments as needed to maintain service coverage.
  • Ensure accurate completion of food production records, temperature logs and HACCP documentation.
  • Uphold sanitation, safety, and cleanliness standards across all galley areas and equipment.
  • Assist with requisitions and inventory control to ensure adequate supplies for night production.
  • Address guest or client concerns related to night/morning meal services.
  • Train and support new or junior staff, fostering a positive team culture.
  • Provide daily shift reports and communicate any issues to the Executive Chef/Sous Chef.
  • Follow established reporting protocols (e.g. first aid, incident notification, workplace safety).
  • Conduct nightly ToolBox talks, effectively conveying pertinent information/updates to crew.
About Working and Living in LandSea Camps:

LandSea Camp and Catering Services provides accommodation and catering solutions for workforces in remote locations throughout BC. Staff live on-site (meals and accommodation included) on scheduled shifts and leave camp on scheduled breaks. A typical shift schedule is any of the following: 4 weeks on and 2 weeks off, 3 weeks on and 1 week off or 2 weeks on and 2 weeks off. Our team members include Clerks, Cleaners, General Helpers, Housekeepers, Janitors, Maintenance, Security, Chefs, Cooks, Bakers, Lodge Managers, Health and Safety Officers and more.

Most of our LandSea camps offer individual staff accommodation, ensuite or shared bathroom, full meals, WIFI and some have health/gym facilities for staff. We provide partial uniforms and help with the travel/reservations as needed to and from camp locations. Camp staff work long hours and and overtime rates apply. A typical workday is between 10-12 hours (day or night shift). Health and Safety and a Respectful Workplace are essential for everyone working together at LandSea. Our camps are drug and alcohol-free workplaces, and some require pre-employment drug and alcohol testing. All new staff are required to complete pre-employment onboarding orientations.
