Job summary

Dexterra Group seeks a Second Cook for our Northern Manitoba remote camp operations. You will collaborate with the First Cook to prepare dinner menus, manage starch and vegetable items, and ensure quality standards across recipes and portions at a remote site.

The role is safety sensitive, requires a Criminal Background Check and pre-employment drug testing, and offers meals, accommodations, and travel from Winnipeg/Thompson/Flin Flon/The Pas. Ideal for team players with camp-cooking experience.

Qualifications

• Experience cooking at scale in camp settings, banquet halls or hotels.
• Current Food Safe certification preferred.
• Must pass Criminal Background Check and pre-employment drug/alcohol testing.
• Commitment to 2 weeks on/1 week off rotation.
• Team-player focused on client satisfaction and safety.

Responsibilities

• Meet daily with the First Cook to discuss menu preparation and production strategy.
• Assist the First Cook in preparing all menu items as needed.
• Follow recipes, portion controls and presentation specifications.
• Prepare and serve hot breakfast as required.
• Replenish desserts and condiment stations as needed.
• Assist in kitchen and serving-area cleanliness and maintenance.
• Assist with baking when required.
• Adhere to proper food handling and storage procedures.

WHAT'S THE JOB?

The Second Cook contributes to the overall success of the Culinary team. Involved in preparing the dinner menu, the Second Cook is responsible for all starch and vegetable items required for the menu. The Second Cook will work with the First Cook to ensure that all product meets quality standards as set out by Culinary leadership.

This position is safety sensitive and requires a criminal record check.

The position involves a remote work lifestyle in a camp setting with the following amenities:

• All meals and accommodations are provided
• Travel is provided to and from the site locations from designated locations in Winnipeg, Thompson, Flin Flon and The Pas.
• Private room with cable television
• Wi-Fi
• Laundry facilities and detergents

Key responsibilities include:

• Meet daily with the First Cook to discuss menu preparation and production strategy
• Assist the First Cook in the preparation of all menu items as needed
• Follow recipes, portion controls, and presentation specifications
• Can be responsible for preparing and serving hot breakfast
• Replenish desserts and condiment stations as required
• Assist in the cleanliness and maintenance of the kitchen and serving areas
• Can be responsible for assisting with baking
• Practice correct food handling guidelines and storage procedures

WHO ARE WE LOOKING FOR?

• Large-scale cooking in camp settings, banquet halls and/or hotels is a strongasset
• Current Food Safe certification is preferred
• Must be able to successfully pass a Criminal Background Check
• Must be able to successfully pass pre-employment drug and alcohol testing
• Ability to commit to a 2 week on/1week off rotation
• A team-player who is committed to providing client satisfaction
• Must have valid government issued photo ID for travel to site
• Ability to handle the following physical demands:
  • Lift, carry, push or pull up to 50 lbs
  • Climb ladders or stairs
  • Stand, walk, squat, kneel or sit according to task for extended periods of time
  • Perform repetitive hand work requiring full use of both hands
  • Perform work with arms at full length
  • Work with arms above shoulder height
