Job summary

The Hotel Australasia in Eden (NSW) is seeking an experienced sous chef to join our culinary team. This full-time role involves supporting the head chef, leading kitchen operations, and ensuring exceptional food quality, safety, and presentation in a dynamic hospitality setting.

You will mentor staff, develop menus with seasonal ingredients, manage inventory and costs, and contribute to delivering memorable dining experiences for our guests at a premier local destination.

Qualifications

  • Qualified in commercial cookery (Cert 3 or higher).
  • Minimum 2 years of experience as sous chef or senior kitchen role.
  • Strong knowledge of HACCP, health and safety standards.

Responsibilities

  • Plan, prepare and cook a wide variety of dishes to high culinary standards.
  • Oversee kitchen operations and ensure health and safety compliance.
  • Mentor kitchen staff and guide food preparation techniques and service standards.
  • Collaborate with management and head chef to refine menus with seasonal ingredients.

Job description

We are currently seeking an experienced sous Chefto join the culinary team at the Hotel Australasia, located in Eden, NSW.

This is a full-time position that offers a unique opportunity to assist our head chef with leading and supporting our kitchen operations in a dynamic hospitality environment. As sous Chef, you will be instrumental in maintaining the highest standards of food quality, safety, and presentation whilst managing kitchen staff and driving our culinary vision in the absence of the head chef. This role is pivotal to delivering exceptional dining experiences to our guests and maintaining the Hotel Australasia's reputation as a premier hospitality destination.

Key responsibilities
  • Planning, preparing, and cooking a wide variety of dishes to the highest culinary standards
  • Overseeing kitchen operations and ensuring compliance with health and safety regulations
  • Managing and mentoring kitchen staff, providing guidance on food preparation techniques and service standards
  • Developing and refining menus in collaboration with management and head chef, incorporating seasonal ingredients and contemporary culinary trends
  • Maintaining inventory control and managing food costs effectively
  • Ensuring consistent quality and presentation of all dishes leaving the kitchen
  • Training staff on food safety, hygiene practices, and kitchen procedures
  • Managing kitchen equipment and facilities, scheduling maintenance as required
  • Liaising with suppliers and sourcing quality ingredients
  • Creating a positive and productive kitchen environment that promotes teamwork and excellence
What we’re looking for
  • Recognized culinary qualification or substantial experience working in professional kitchen environments – cert 3 or higher in commercial cookery
  • Proven experience as a sous Chef or senior kitchen position within a hospitality setting. minimum 2 year's experience
  • Demonstrated expertise in food preparation, cooking techniques, and menu planning
  • Strong knowledge of health and safety regulations, food hygiene standards, and HACCP principles
  • Excellent leadership and communication skills with the ability to manage and motivate kitchen teams
  • Sound understanding of food costs, budgeting, and inventory management
  • Ability to work under pressure, manage multiple tasks, and maintain high standards during service periods
  • Flexibility to work varied shifts, including weekends and public holidays as required
  • A passion for culinary excellence and commitment to continuous professional development
  • Experience in Australian hospitality and knowledge of local produce is highly desirable
