Job summary

La Cabra Mexican Restaurant in Melbourne's South Yarra is seeking an experienced Cook to join our busy kitchen team. You will prepare, season and cook a range of modern Mexican dishes to our recipes and portion sizes, ensuring consistency in flavour and presentation.

You will work with the Chef to plan daily specials, maintain food safety standards, and assist with inventory, prep and opening/closing duties.

Qualifications

• Certificate III in Commercial Cookery is essential.
• Experience in a professional kitchen is essential.
• Ability to work in a fast-paced kitchen and follow recipes.

Responsibilities

• Mise en Place: prepare ingredients, sauces, marinades, salsas and other components before service.
• Cooking to Recipe: prepare and cook menu items according to recipes and standards.
• Mexican Cuisine: cook a range of modern Mexican dishes to consistent quality.
• Speciality Techniques: apply Mexican techniques like moles, salsas, slow-cooked meats.
• Quality Control: ensure flavour, appearance and temperature consistency.
• Dietary Requirements: accommodate vegetarian, vegan and gluten-free requests.
• Service Coordination: coordinate with Chef and kitchen staff during service.
