Job summary

Lucas Collective in Australia seeks a Head Sommelier to elevate our wine program across a growing portfolio of premium restaurants and bars. The role combines deep wine knowledge with hands-on service, cellar maintenance, inventory control and team leadership to deliver exceptional guest experiences during busy service periods.

Full-time, weekends and holidays required, with opportunities to contribute to new venue openings in 2026.

Qualifications

• Experience as Head Sommelier or Assistant Head Sommelier.
• Extensive knowledge of wine, new and old world.
• Passion for the wine industry.
• Experience with stock control and inventory management.
• Up-to-date with industry trends.
• Ability to lead high-performing teams and exceed targets.
• Exceptional service and guest focus.
• Full-time availability including weekends, public holidays, opening and closing shifts.
• Excellent communication and presentation skills.
• Strong organisational and time management.
