Job Description
You’ll oversee a varied production model, with some products prepared centrally before being proved and baked fresh in-store, while others are baked in the production kitchen and distributed across the portfolio.
With additional Sydney locations already planned, you’ll join at the perfect time to establish the systems, standards and team that will support the next stage of growth.
This isn’t a traditional plated‑dessert role. The focus is on laminated doughs, premium baked goods, production planning and scaling recipes without compromising quality. Beyond leading the central production kitchen, you’ll spend time across the growing store portfolio: training teams, supporting product launches and ensuring every pastry is proved, baked, finished and presented to the same exceptional standard.
What you’ll lead
You’ll oversee a small team of pastry chefs initially, with the opportunity to build the department as the store network expands.
Your role will include:
- Leading daily pastry production, planning and workflow
- Managing quality, consistency, yields and output across approximately 12 core products
- Scaling recipes effectively for larger production volumes
- Overseeing laminated doughs, viennoiserie and seasonal pastry ranges
- Preparing products for central baking or proving and finishing in-store
- Building clear systems, recipes and production standards
- Training, developing and onboarding pastry team members
- Visiting stores to review baking, finishing, garnishing and presentation
- Supporting new store openings and new product launches
- Contributing ideas to seasonal ranges and future product development
About youYou’re an experienced pastry leader who understands that exceptional quality at scale requires more than technical skill. It takes planning, structure, training and relentless consistency.
You’ll ideally bring:
- Strong knowledge of laminated doughs and viennoiserie
- Experience within a bakery or high-volume pastry production environment
- Confidence scaling recipes and planning production across multiple locations
- Strong people leadership and the ability to build an engaged, accountable team
- A sharp eye for quality, presentation and product consistency
- A practical, solutions‑focused approach to growing operations
