Job summary

Delaware North Australia & New Zealand is seeking a Chef de Cuisine - Retail to lead the retail kitchen at the Melbourne Cricket Ground (MCG). You will oversee daily operations, develop on-trend menus, mentor staff and ensure food safety and cost controls in a high-volume, iconic venue.

Qualifications

• Proven experience managing retail kitchen operations.
• Strong track record of leading diverse culinary teams.
• Expertise in menu development, stock management and cost control.
• Strong commercial acumen with a track record of delivering business outcomes.
• Relevant culinary qualifications.
• Proficiency in stock control systems, spreadsheets and accounting software.
• Excellent communication and leadership skills.

Responsibilities

• Oversee the daily operations of the retail kitchen.
• Develop innovative menu concepts aligned with current food trends and guest preferences.
• Provide strong leadership, mentorship and hands-on training to foster a high-performing, motivated team.
• Set and uphold exceptional food standards through efficient systems and processes.
• Assist in managing department budgets, food costs, utilising IT systems to drive efficiency and profitability.
• Managing performance and labour costs for permanent and casual kitchen staff.
• Championing on-site food safety and HACCP accreditation.
