Job summary

Pavoni Plus Pty Ltd | Cibaria Manly in Manly, NSW, is seeking a passionate Pastry Cook to join a premium Italian restaurant and hotel group. You will produce pastries, desserts, cakes and other baked goods to high standards in a busy, high-volume environment.

The role offers a full-time permanent position with an annual salary of $79,000–$80,000 plus superannuation, training and career progression across Maestro Hospitality venues.

Qualifications

  • Must have Certificate III or higher in Patisserie or Commercial Cookery or equivalent.
  • Experience as a Pastry Cook in a high-volume or premium dining environment.
  • Strong knowledge of pastry production techniques, desserts, cakes, breads and baked goods.

Responsibilities

  • Prepare, bake and present a wide range of pastries, desserts, cakes and breads to company standards.
  • Produce mise en place and daily pastry preparation per production schedules.
  • Assist with development and implementation of seasonal dessert menus.

Located within the stunning Manly Pacific Hotel overlooking Manly Beach, Cibaria Manly is a vibrant Italian restaurant, bar and event destination celebrating authentic Italian cuisine, house-made pastries and desserts, premium beverages and genuine hospitality. Part of Maestro Hospitality, Cibaria Manly sits alongside some of Australia's most recognised Italian venues, including Two-Hatted a'Mare and Ormeggio at The Spit, as well as One-Hatted Postino Osteria, Pizza'Mare, and Vineria Luisa. We are seeking a passionate and experienced Pastry Cook to join our growing kitchen team. Essential Requirements
  • Full Australian working rights or eligibility to work in Australia.
  • Certificate III or higher in Patisserie or Commercial Cookery, or equivalent qualification and/or 1–3 years' experience as a Pastry Cook or in a similar pastry role within a commercial kitchen.
  • Strong knowledge of pastry production techniques, desserts, cakes, breads and baked goods.
  • Experience producing high-quality products in a high-volume or premium dining environment.
  • Excellent organisational and time management skills.
  • Ability to work efficiently under pressure while maintaining exceptional attention to detail.
  • Sound understanding of food safety, hygiene and HACCP principles.
  • Availability to work a flexible roster, including weekends and public holidays.
Desirable Requirements
  • Experience in Italian pastry and dessert production.
  • Experience working in premium restaurants, hotels or high-volume venues.
  • Food Safety Supervisor Certificate.
  • Experience with menu development and seasonal dessert creation.
  • Strong understanding of allergen management and dietary requirements.
Key Responsibilities
  • Prepare, bake and present a wide range of pastries, desserts, cakes, breads and other baked goods to company standards.
  • Produce mise en place and complete daily pastry preparation in accordance with production schedules.
  • Assist with the development and implementation of seasonal dessert menus.
  • Monitor food quality, consistency and presentation to ensure exceptional guest experiences.
  • Maintain appropriate stock levels and minimise food waste through effective stock rotation and inventory control.
  • Ensure all equipment is operated safely and maintained in a clean and hygienic condition.
  • Comply with all food safety, HACCP, workplace health and safety, and company procedures.
  • Work collaboratively with the Executive Chef and kitchen team to deliver high-quality service.
  • Assist with ordering, receiving and storing pastry ingredients.
  • Contribute to a positive, professional and high-performing kitchen culture.
