Chef De Cuisine

We are seeking a passionate Culinary professional; strengths in high volume pace, thorough knowledge the culinary experience, and exceptional Beyond Compare attitude. Under the guidance of Executive Chef, the Chef will oversee all kitchen operations at the Sunshine Resort. This position will be responsible for leading and managing the kitchen employees, ensuring exceptional quality and presentation of all menu items, and proper handling storage of all food items in accordance with health regulations.

The primary responsibilities for the Chef de cuisine will include but are not limited to:

  • Assume leadership role in production, execution and overseeing Culinary Department; Banquets and another resort culinary activities.
  • Maintain commitment for guest service and employee development.
  • Maintain the highest quality while understanding food cost and daily sanitation best practices.
  • Oversee all production and service of food in all kitchen areas of the Sunshine Grill & Sunshine Resort.
  • Train and lead kitchen employees in the proper preparation of menu items, equipment and safety.
  • Inspect, select and use the freshest fruits, vegetables, meats, fish, fowl and other food preparation of all menu items.
  • Observe expediting flow of all kitchens; making adjustments in order to adhere to control procedures for cost and quality.
  • Maintain knowledge of local competition and general industry trends.
  • Train and develop all Kitchen staff to ensure the continuation of career growth.
  • Oversee weekly and monthly inventories.
  • Monitor to ensure proper receiving, storage and rotation of food products, complying with the Cayman Island health department regulations, including coverage, labeling, dating and placing items in proper containers for kitchen and service.
  • Continually review menus and items, while coordinating with the Executive Chef to update menus as appropriate including recipes, menu specifications and production forecasts.
  • Schedule the kitchen staff for proper coverage to maintain service levels while keeping payroll costs in line with productivity forecast.
  • Oversee that all equipment in the Kitchen is clean and in proper working condition, ensuring any issues are taken care of with the Engineering team.
  • Create and maintain a highly functional, teamwork-oriented, back of the house team.
  • Assist the Executive Chef with special projects as assigned.
  • In the absence of Executive Chef, assume all duties of Executive Chef.
Supportive Functions
  • Monitor outlets during peak period to oversee production flow and presentation.
  • Maintain vacation schedule for proper staffing.
  • Report any equipment in need of repair to Engineering for service.
  • Perform duties of Manager On Duty Program as necessary.
What are we looking for?
  • Degree in Culinary Arts or related field.
  • Any combination of education and experience equivalent that provides the required knowledge, skills, and abilities.
  • At least 5 years previous experience leadership with proof tracking of results required.
  • Must be able to read and write English efficiently.
  • Culinary school training required.
  • Must have prior experience as Chef de Cuisine with knowledge of most international and domestic dishes.

This position requires working a flexible schedule of day and/or evening shifts including weekends and public holidays and on call at all times. The applicant must meet the minimum requirements and must be able to speak, read, write and understand the primary language “English” used in the workplace.

Compensation

CI55,000.00
