Hotel Sorrento is seeking an experienced Bars Operations Manager to lead the bar portfolio on the Mornington Peninsula, including Salt, Front Bar, Rooftop, Shi Hui Shi Bar, Pool Bar, Lounge Bar and Lobby Bar. This senior, hands-on role partners with the Beverage Manager and directs the Bar management team to deliver outstanding service, strong commercial results and a superior guest experience.

Qualifications

• Senior management experience in high-volume multi-outlet bars or hotel operations.
• Proven ability to manage budgets and KPIs.
• Strong workforce planning and labour management skills.
• Track record of delivering exceptional guest experiences.
• Calm under pressure with strong decision-making.
• Current Victorian RSA.

Responsabilités

• Lead, inspire and develop the Bar management team.
• Take ownership of departmental performance, budgets and KPIs.
• Plan staffing, rosters and management coverage around trade and business needs.
• Drive revenue, productivity and profitability across all venues.
• Oversee recruitment, training, performance and team development.
• Maintain exceptional service, presentation and guest experience standards.
• Lead operations during busy periods, events and complex trading environments.
• Work with security providers to manage venue capacity, entry, queues and patron behaviour.
• Ensure incidents are managed, documented and followed through appropriately.
• Maintain strong stock control, cellar standards and wastage management.
• Ensure all venues, equipment and storage areas are maintained to a high standard.
• Maintain compliance with Victorian liquor licensing, wagering, RSA, safety and hotel requirements.

Hotel Sorrento is looking for an experienced Bars Operations Manager to take the lead and oversee some of the Mornington Peninsula's most iconic bars: Salt, Front Bar, Rooftop, Shi Hui Shi Bar, Pool Bar, Lounge Bar and our new Lobby Bar.

This senior, hands‑on role will work alongside the Beverage Manager and lead the Bar management team and is accountable for the department’s operational and financial performance, workforce, guest experience and service standards.
