About The Role

Join the iconic St Hugo Brand Home team as an Assistant Restaurant Manager and help us deliver a world-class dining experience that celebrates fine wine and exceptional hospitality.

In thisrole, you’ll be the driving force behind day-to-day operations at the St Hugo restaurant, ensuring every guest enjoys an unforgettable visit.

You’ll also play a key part in planning and delivering premium events, hosting VIP guests, training our talented Front of House team, and collaborating across the Brand Home precinct to create seamless experiences.

This is a permanent, part-time position (approx 30 hrs per week).

Key Responsibilities
Operational Leadership
  • Oversee daily restaurant operations and guide the hosting team to deliver exceptional service.
  • Manage booking systems (Sevenrooms), product listings, and inventory to keep everything running smoothly.
  • Coordinate ordering schedules and ensure compliance with safety and quality standards.
Team Development & Training
  • Inspire and lead the team to deliver premium wine and dining experiences.
  • Plan and deliver wine education and operational training sessions.
  • Support onboarding and career development for new team members.
Customer Experience & Brand Representation
  • Be a true brand ambassador—host VIP guests and create memorable experiences.
  • Handle customer queries with professionalism and ensure every touchpoint reflects St Hugo’s excellence.
Restaurant Service
  • Lead Front of House during service, advising on wine pairings and ensuring flawless execution.
  • Maintain high standards of presentation and cleanliness across all areas.
Cellar Door & Wine Experiences
  • Supervise tastings and promote wine sales to meet Brand Home KPIs.
  • Upsell special offerings and memberships to enhance engagement.
Other
  • Assist in planning and delivering premium events, ensuring seamless coordination between teams.
  • Champion a strong safety culture and support compliance audits.
  • Prepare insights for monthly meetings and step in for the Brand Home Manager when needed.
What You'll Bring
Essential

  • WSET Level 2 or equivalent wine education.
  • RSA & Liquor Licensing certification.

  • Responsible Service of Alcohol & Liquor Licensing Laws Certificate
