Job summary

Conrad Dubai is seeking a Stewarding Supervisor to coordinate with Culinary and Food & Beverage teams to ensure clean, polished equipment is available when needed. You will oversee the cleaning, storage, and distribution of china, glassware, silverware, and stewarding equipment, safeguarding quality and appearance.

You will supervise sanitation across kitchens and back-of-house areas, ensure adherence to Hilton HACCP procedures and local health rules, manage equipment maintenance, monitor stock

Qualifications

• Experience in hospitality operations and stewarding preferred.
• Knowledge of HACCP procedures and local health requirements.

Responsibilities

• Coordinate with Culinary and F&B teams to ensure clean, polished equipment is available when needed.
• Oversee cleaning, storage and distribution of china, glassware, silverware and stewarding equipment, protecting quality and appearance.
• Supervise cleaning and sanitising across kitchens and back-of-house areas, ensuring adherence to HACCP procedures and local health requirements.
• Ensure stewarding equipment and dishwashing machines are used correctly and maintained; report repairs promptly.
• Monitor stock, breakages and supply usage to help control costs without compromising quality.
• Assign daily duties, train and coach team members, and recognize good work to build a dependable team.
• Promote safe working practices and promptly address hygiene or safety concerns.

Here’s what you’ll do during a typical day as a Stewarding Supervisor at Conrad Dubai:

• Prepare for exceptional service: Coordinate with Culinary and Food & Beverage teams to ensure every kitchen and dining outlet has the clean, polished equipment it needs, when it needs it.
• Care for every detail: Oversee the cleaning, storage, and distribution of china, glassware, silverware, and stewarding equipment, protecting their quality and appearance.
• Maintain impeccable standards: Supervise cleaning and sanitising across kitchens and back-of-house areas, ensuring the team follows Hilton HACCP procedures and local health requirements.
• Keep equipment service-ready: Check that dishwashing machines and other stewarding equipment are used correctly, maintained, and reported promptly when repairs are needed.
• Manage resources responsibly: Monitor stock, breakages, and supply usage, helping control costs without compromising quality.
• Lead with care: Assign daily duties, train and coach team members, and recognise great work to build a confident, dependable team.
• Protect guest and team member well-being: Promote safe working practices and respond promptly to hygiene or safety concerns.
