At JA The Resort, we believe exceptional dining begins with passion, precision, and people. We are currently seeking an experienced and motivated Sous Chef – Sushi to support our sushi kitchen operations and help deliver outstanding Japanese culinary experiences within our luxury resort.

About the Role

As Sous Chef – Sushi, you will play a key role in the day-to-day operation of the sushi kitchen, ensuring the highest standards of quality, consistency, and food safety. Working closely with the culinary leadership team, you will help guide, train, and motivate the kitchen brigade while maintaining brand and hygiene excellence.

Key Responsibilities
  • Support daily sushi kitchen operations and service
  • Prepare and present sushi, sashimi, and Japanese dishes to established standards
  • Ensure consistent food quality, presentation, and portion control
  • Maintain full compliance with HACCP and food safety regulations
  • Assist in training, supervising, and developing team members
  • Oversee mise en place, inventory control, and stock rotation
  • Minimize food waste and support cost-control initiatives
  • Maintain a clean, safe, and organized kitchen environment
Qualifications & Experience
  • Proven experience as a Sous Chef – Sushi or Senior Sushi Chef
  • Strong expertise in Japanese cuisine, sushi preparation, and knife skills
  • Previous experience in a luxury hotel or high‑end restaurant environment
  • Sound knowledge of HACCP standards and hygiene practices
