Job summary

Fundamental Hospitality is seeking an experienced Restaurant General Manager to lead Shanghai Me in Dubai, DIFC. You will own day-to-day operations, drive premium guest experience and oversee P&L, budgets and cost control.

The ideal candidate has proven GM experience in high-end dining, strong leadership, fluent English, and a track record of building high-performing teams while delivering exceptional service in Pan-Asian concepts. Dubai/UAE experience preferred.

Qualifications

• Proven experience as a General Manager or senior operational leader in a high-end restaurant.
• Experience in Pan-Asian dining concepts is strongly preferred.
• Proven track record managing P&L, budgets, labour costs and overall financial performance.
• Excellent knowledge of premium dining operations, service standards and guest expectations.
• Dubai or UAE experience is strongly preferred.

Responsibilities

• Take full ownership of the day-to-day operation and overall performance of the venue.
• Lead and develop the management and operational teams, creating a culture of accountability, service excellence and teamwork.
• Ensure consistently high standards across service, food quality, guest experience and venue presentation.
• Drive revenue, profitability and commercial performance in line with business objectives.
• Take ownership of the venue P&L, budgets, forecasting, labour costs and operational expenses.
• Analyse financial and operational performance and implement action plans to improve efficiency, revenue and profitability.
• Build strong relationships with VIP guests, regular clientele and key external stakeholders.
• Ensure the venue delivers a consistently exceptional experience for guests, with a focus on service recovery and guest satisfaction.
• Oversee recruitment, onboarding, training and performance development of the team in partnership with HR.
• Ensure compliance with all operational, licensing, health, safety and hygiene requirements.
• Work with senior management on events, marketing and business development opportunities.
• Oversee purchasing, inventory, cost control and supplier relationships to maintain operational efficiency.
• Drive continuous improvement across the operation and lead by example.

Requirements

• Proven experience as a General Manager or senior operational leader within a high-end restaurant or premium dining concept.
• Previous experience within Pan-Asian dining concepts is strongly preferred.
• Proven track record managing high-volume operations and large, diverse teams.
• Strong commercial understanding with experience managing P&L, budgets, labour costs and overall financial performance.
• Excellent knowledge of premium dining operations, service standards and guest expectations.
• Strong leadership and people management skills, with the ability to build, motivate and develop high-performing teams.
• Excellent communication skills in English; additional languages are advantageous.
• Strong understanding of current hospitality trends, evolving guest expectations and the premium dining market.
• Dubai or UAE experience is strongly preferred.
