InterContinental Residences Dubai Business Bay is seeking a passionate, detail-oriented, and excellence-driven Executive Sous Chef to support culinary leadership and elevate our dining experiences to Forbes-level service and Michelin-inspired quality. Reporting directly to the Director of Culinary, you will play a critical role in overseeing daily kitchen operations, driving culinary innovation, and ensuring the highest standards of food quality, consistency, and presentation.

Located in the heart of Dubai’s Business Bay, just moments from iconic landmarks such as Dubai Mall and Burj Khalifa, InterContinental Residences Dubai Business Bay features 176 elegantly designed residences and hotel rooms, offering refined luxury, comfort, and sophistication. As Executive Sous Chef, you will be instrumental in shaping memorable culinary journeys that reflect the prestige of the InterContinental brand.

Your Day-to-Day

Every day is different, but you’ll mostly be:

Culinary Leadership & Operations
  • Support the Director of Culinary in managing all kitchen operations, ensuring seamless day‑to‑day execution across outlets, banquets, and in‑room dining.
  • Lead kitchen operations in the absence of the Director of Culinary, ensuring service continuity and operational excellence.
  • Ensure all culinary offerings meet Forbes luxury standards and are executed with Michelin‑level precision, creativity, and consistency.
  • Oversee food preparation, cooking techniques, and presentation to ensure exceptional quality at all times.
Quality, Standards & Guest Experience
  • Uphold and champion IHG brand standards, Forbes Travel Guide requirements, and fine‑dining culinary principles.
  • Ensure strict adherence to food safety, hygiene, and sanitation standards (HACCP).
  • Collaborate closely with Front of House and Guest Experience teams to deliver seamless, personalized dining experiences.
  • Manage special guest requests, dietary requirements, and VIP dining experiences with precision and care.
Menu Development & Innovation
  • Assist the Director of Culinary in menu planning, recipe development, tastings, and seasonal menu rotations inspired by Michelin-level cuisine.
  • Balance creativity with operational efficiency and cost control.
  • Drive continuous improvement through menu engineering and culinary innovation.
Team Development & Engagement
  • Train, mentor, and inspire culinary colleagues to perform at the highest professional level.
  • Foster a positive kitchen culture rooted in respect, discipline, teamwork, and continuous learning.
  • Support recruitment, onboarding, performance management, and succession planning within the culinary team.
Cost Control & Administration
  • Assist with inventory management, ordering, and stock control to minimize waste and optimize food cost.
  • Support budgeting, forecasting, and food cost analysis in collaboration with the Director of Culinary.
  • Ensure accurate documentation, recipe costing, and compliance with internal controls.
What We Need from You
Qualifications & Experience
  • Proven experience as an Executive Sous Chef or Senior Sous Chef in a luxury hotel or fine‑dining environment.
  • Michelin‑starred restaurant experience or background in Michelin‑influenced kitchens is highly preferred.
  • Strong working knowledge and hands‑on experience with Forbes Travel Guide standards.
  • Excellent understanding of international cuisines, modern culinary techniques, and luxury presentation.
  • Strong leadership, planning, and operational management skills.
Preferred
  • Culinary degree or professional certification from a recognized culinary institution.
  • Experience in a residence‑hotel or multi‑outlet luxury property.
  • Pre‑opening or brand transition experience is an advantage.
