Responsibilities

  • Assist the Pastry Chef with the preparation of desserts, pastries, cakes, and other pastry items.
  • Follow standardized recipes, portion requirements, and preparation instructions to maintain consistency.
  • Complete daily mise en place before service and organize ingredients, tools, molds, trays, and garnishes for efficient production.
  • Prepare components required for plated desserts, including creams, sauces, fillings, bases, decorations, and finishing elements.
  • Operate pastry kitchen equipment safely (mixers, ovens, processors).
  • Apply baking, chilling, setting, tempering, finishing, and storage techniques according to product requirements.
  • Maintain a clean and orderly pastry station throughout preparation and service.
  • Check ingredient quality and freshness before use and report unsuitable or expired products.
  • Apply FIFO stock rotation practices to reduce waste and protect product quality.
  • Coordinate with pastry colleagues and other kitchen sections when production schedules overlap.
  • Contribute ideas for seasonal desserts, buffet selections, and new menu concepts.
  • Follow established food safety, personal hygiene, sanitation, and allergen-control procedures at all times.
  • Support junior pastry colleagues by mentoring and demonstrating proper methods.
  • Assist with ingredient usage control, waste reduction, portion management, and other food cost initiatives.
  • Maintain consistent appearance, texture, flavor, and portioning across finished pastry products.
  • Prepare the section for shift handovers with clear communication.
