Rixos Marina Abu Dhabi is seeking an experienced Cost Controller to join our dynamic Finance team. This role is ideal for a detail‑oriented professional who thrives in a fast‑paced, high‑volume hospitality environment. You will play a key role in optimizing costs, supporting financial controls and contributing to the overall profitability of our all‑inclusive operations.

About the Role

Reporting to the Director of Finance, the Cost Controller will manage all aspects of food and beverage cost control and analysis. You will coordinate with procurement, stores and kitchen teams to monitor inventory levels, validate invoices and ensure accuracy in pricing and costing. Your role is essential in delivering timely reports, conducting internal audits and ensuring compliance with company policies and ISO standards.

Key Responsibilities
  • Manage and control costs across all F&B outlets, ensuring alignment with budget goals
  • Manage costs related to the All Inclusive concept and cost transfers from other outlets participating in All Inclusive package plans
  • Monitor inventory movements and ensure accurate stock levels for food, beverage and supplies
  • Verify receiving documentation, supplier invoices and ensure pricing aligns with market lists
  • Prepare daily and monthly F&B cost reports, outlet P&Ls and performance analysis
  • Support month‑end closings, inventory counts and internal control procedures
  • Collaborate with Culinary and F&B teams to cost recipes and analyze menu profitability
  • Assist in implementing audit procedures and cost‑saving initiatives
  • Ensure compliance with ISO IMS standards including Food Safety and Environmental Management
What We're Looking For
  • Bachelor's degree in Finance, Accounting or Hospitality Management
  • Minimum 35 years of experience in a 5‑star hotel environment managing multiple F&B outlets, including buffet and specialty restaurants, banquets and bars operated under the hotel’s own operational and performance accountability
  • Strong knowledge of food and beverage cost control systems
  • Familiarity with inventory systems, procurement processes and financial reporting
  • Excellent analytical and organizational skills
  • High level of integrity, transparency and professionalism
  • Strong communication skills and ability to work cross‑functionally
