What will I be doing?

As a Commis 3 in the Hot Kitchen, you are responsible for preparing, cooking, and presenting high‑quality hot dishes to deliver an excellent guest experience. You will also be required to prepare all mise‑en‑place and contribute to departmental targets.

Responsibilities

  • Ensure consistent, high‑quality production of hot dishes in line with the high standards expected by Hilton.
  • Prepare, cook, and present hot food items within company guidelines.
  • Perform all tasks in a timely and efficient manner to support smooth kitchen operations.
  • Contribute to kitchen revenue through effective food cost control.
  • Keep all working areas clean, tidy, and well‑organized, ensuring no cross‑contamination.
  • Prepare all mise‑en‑place for all relevant hot kitchen sections (such as grill, sauté, fry, sauce, and garnish).
  • Assist other departments and kitchen sections wherever necessary and maintain good working relationships.
  • Report any maintenance, hygiene, or hazard issues promptly.
  • Comply with hotel security, fire regulations, and all health & safety and food safety legislation.
  • Be aware of departmental targets and strive to achieve them as part of the team.
  • Meet all required health, hygiene, and sanitation standards at all times.

  • Completion of an accredited commercial cookery course or trade apprenticeship.
  • NVQ Level 1 in Professional Cookery (or equivalent).

It would be advantageous for you to demonstrate the following capabilities and distinctions:

  • NVQ Level 2 in Professional Cookery (or equivalent).
