Job Description

The Chef de Partie – Pastry is responsible for preparing, baking, and presenting high-quality pastries, desserts, breads, and baked goods while maintaining the highest standards of hygiene, consistency, and creativity. This role supervises commis chefs within the section and ensures smooth daily operations of the pastry kitchen.

Key Responsibilities
  • Prepare and produce a wide range of pastries, desserts, cakes, bread, and plated desserts according to hotel standards and recipes.
  • Plan and organize mise-en-place to ensure timely service and quality output.
  • Supervise and guide Commis and Demi Chefs within the pastry section.
  • Ensure consistency in taste, texture, and presentation of all pastry items.
  • Maintain strict hygiene and food safety standards (HACCP).
  • Control portioning and minimize waste to support cost control.
  • Assist in menu planning and development of new dessert concepts.
  • Monitor stock levels and inform the supervisor of requisition needs.
  • Ensure proper storage, labeling, and rotation of raw materials and finished products.
  • Maintain a clean, organized, and safe working environment at all times.
  • Participate in training and skill development sessions.
