A skilled Briyani Master will be responsible for preparing authentic, flavour‑rich briyani varieties while maintaining high standards of taste, hygiene, and consistency. The role requires strong culinary expertise, deep knowledge of traditional cooking methods, and the ability to work efficiently in a fast‑paced kitchen environment.
Main Responsibilities
- Prepare different varieties of briyani including Hyderabadi, Dum Briyani, Chicken, Mutton, Fish, Egg, and Vegetable, ensuring rich aroma, flavour balance, and perfect grain separation.
- Handle full briyani preparation cycle — marination, spice blending, rice cooking, meat cooking, dum process, and final layering.
- Maintain consistency in taste, texture, and presentation across all batches.
- Prepare fresh masalas, gravies, side dishes, raita, and accompaniments based on menu requirements.
- Ensure timely preparation of large-volume briyani orders, especially during peak hours.
- Monitor stock levels of ingredients and communicate shortages to the kitchen supervisor.
- Maintain strict hygiene, cleanliness, and food safety standards throughout the cooking and serving process.
- Manage kitchen helpers, delegate tasks, and train junior staff on briyani preparation basics.
- Handle kitchen equipment responsibly, ensuring safety and efficiency.
- Follow restaurant recipes and portion control guidelines to minimize wastage.
- Maintain quality control for all briyani items served to customers.
Essential Qualifications
- Minimum 3–5 years of proven experience as a Briyani Master or specialized cook in a hotel, restaurant, or catering environment.
- Strong knowledge of traditional dum briyani methods and regional cooking styles.
- Ability to prepare high-volume biryani without compromising quality.
Skills Required
- Expertise in spice blending, marination, and flavour balancing.
- Strong understanding of rice quality, soaking time, boiling time, and dum techniques.
- Ability to work under pressure and manage bulk orders efficiently.
- Good teamwork, coordination, and communication skills.
- Knowledge of kitchen safety, hygiene practices, and food handling standards.
- Ability to maintain consistency in taste and quality across multiple batches.
